Summer dinner


On Saturday we picked an eggplant from our garden. I don't cook much with eggplant, but Ben loves them so I grew one just for him. Having harvested one, I wasn't sure what to do with it until I found this easy recipe for eggplant and tomato slices at Allrecipes. Since we had some pesto in the fridge, I spread some on each eggplant slice and I made sure to add lots of pepper to the tomato slices. It was really good! We had it with swordfish out on our porch. Very nice.
